Vegan Sweet Corn Fritters

Here we have some golden brown vegan sweet corn fritters with a semi-sweet taste. It is easy to make and can be ready in just 30 minutes. It’s actually hard to believe that these little fritters contain no eggs or dairy milk. As for size…you can make these fritters as big as you want them to be. Okay, if you’re going to make them bigger obviously you will get less fritters in the end but if you make them smaller you will get more fritters. Well, I guess that’s basic math.

The Oil Aspect:

My suggestion for these fritters would be to place them between layers of paper towels to soak up any excess oil. You can also take a piece of a paper towel and lightly press on each individual fritter to get rid of any unwanted oil. Unfortunately these fritters don’t fry as well without some oil. And if your hand slipped and you’ve used too much oil it can become quite bothersome. But not too worry…paper towels will come to your rescue. Just place them nearby before you start frying.

The Baking Powder Aspect:

Another suggestion would be to use a healthier baking powder if you are sensitive to the traditional one. You can use the baking powder from Nature’s Choice (a South-African product), for example. I used the traditional baking powder for this recipe but it really isn’t as healthy.

The Fructose Aspect:

If you are sensitive to fructose or just don’t like it you have a few other options:

  • You can eliminate the fructose all together and opt for a salty fritter. Probably healthier that way anyway.
  • You can use Xylitol instead.
  • You can use honey instead. You will just have to melt the honey together with the Coconut Oil. It will mix much easier that way.

Vegan Sweet Corn Fritters

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Yield: 12 fritters

Vegan Sweet Corn Fritters


  • 2 cups Frozen Sweet Corn
  • ¾ cup Water
  • 1 cup Unbleached White Flour
  • ⅛ cup Fructose
  • 2 teaspoons Corn Starch
  • 1 teaspoon Himalayan Salt
  • ½ teaspoon Baking Powder
  • ½ tablespoon Coconut Oil
  • Olive Oil for frying


    Dough Mix:
  1. Mix the following ingredients together in a mixing bowl: Sweet corn1, water, flour, fructose, corn starch, salt and baking powder.
  1. Melt the coconut oil in the microwave.
  2. Add the coconut oil to the dough mix.
  3. Mix all together thoroughly.
    Preparing to Fry:
  1. Add a drop of olive oil in a pan. Swirl the olive oil in the pan until the bottom of the pan is covered in oil.
  2. Preheat the pan, containing the olive oil, on high heat.
  3. While you wait for the pan to heat, cover a plate with a paper towel.
  1. When the pan is fairly hot add spoonfuls of dough to the pan.2
  2. Fry for approximately 2 minutes on high. Flip the fritters over and fry for approximately 2 minutes on the other side as well.
  3. Fry the fritters until they are golden brown, flipping them over from time to time to ensure that they don’t burn.
  4. Repeat steps 8 to 10 for each new batch.3
  5. Place the golden brown fritters between layers of paper towels to get rid of any excess oil.


1. It doesn’t matter if the sweet corn is still frozen. You don’t have to defrost it.

2. I usually get three spoonfuls in a pan but it will depend on your pan size and how big your spoonfuls are.

3. Each time you insert a new batch make sure there are still some oil left in the pan, otherwise add a little bit of oil.
