Vegan Lentil Bobotie

A delicious bobotie made with whole lentils, tomato paste, pumpkin and coconut milk. It’s also adaptable since you can play around with the ingredients. For example, you can use sweet potatoes instead of pumpkin and soy/rice milk instead of coconut milk. You can also choose if you’d like to add raisins and onions. If not, you can replace these ingredients with something else you like more. As for the tomato paste part…you will see that the tomato paste mixture will be very pink/red. If you don’t want your bobotie to be a pink/red color you can just lessen the amount of tomato paste you add. So just make sure you have an oven dish, a good whisk and a great oven and you’re good to go.

Vegan Lentil Bobotie


  • 1 cup Whole Lentils
  • 400 g Pumpkin1
  • 1 medium-sized Onion (Optional)
  • ½ cup raisins (Optional)
  • ¾ cup Coconut Milk
  • ½ cup Water
  • 70g tin Tomato Paste
  • 2 tablespoons Chana Flour
  • 2 tablespoons Fructose
  • 1 teaspoon Olive Oil
  • 1 teaspoon Himalayan Salt
  • 1 teaspoon Mixed Herbs
  • 1 teaspoon Oreganum
  • 1 teaspoon Paprika


    Soaking Overnight:
  1. Soak the lentils overnight in some water.
    Cutting & Cooking:
  1. Cut the pumpkin and measure out 400g of pumpkin.
  2. Cook the lentils and pumpkin separately.
  3. Drain the excess water from the lentils.
  4. Mash the cooked pumpkin.
  5. Cut the onion in small pieces.
  6. Mix the lentils, pumpkin, onion and raisins together.
  1. Whisk the coconut milk, water, tomato paste, chana flour, fructose, olive oil, salt, mixed herbs, oreganum and paprika together. Make sure there are no lumps.
  1. Add the whisked mixture to the lentil, pumpkin and onion mix.
  2. Mix all together.
  1. Spray an oven dish with cooking spray.
  2. Add the mixture to the oven dish.
  3. Bake in the oven on high (270°C/518°F) for 30 - 40 minutes.2


1. You can use sweet potatoes instead of pumpkin.

2. The oven times and heat temperature may vary since we use a gas stove.
