Stuffed Gem Squash with Onions and Corn

This stuffed gem squash recipe is generally made by stuffing a gem squash with sweet corn (from tins) and topping it with cheese. For a while I was wondering how I am going to come up with an appetizing alternative. I then got the idea to use a mix of sweet corn and caramelized onions.

At first I only used frozen sweet corn instead of sweet corn from tins. It eliminated the sugar problem since the tins usually contains sugar. However, using only frozen sweet corn was a little bit dull. So I decided to make caramelized onions, mix it together with the corn and place it inside the gem squash. Stuffed Gem Squash with Onions and Corn

Prep Time: 20 minutes

Cook Time: 25 minutes

Total Time: 45 minutes

Serving Size: 2 people

Stuffed Gem Squash with Onions and Corn


  • 2 medium-sized Gem Squash
  • 1 ½ medium-sized Onions
  • 2 tablespoons Olive Oil
  • 1 tablespoon Lemon Juice
  • 2 tablespoons Honey (or Fructose)
  • 1 teaspoon Healthy Soya Sauce
  • ½ teaspoon Himalayan Salt
  • 1 cup frozen Sweet Corn


    Cooking the Gem Squash:
  1. Cut both of the gem squash in half.
  2. Cook or steam the gem squash until they are soft.
    Cut and fry:
  1. Cut the onions in small slices.
  2. Fry the onions in olive oil on high.
  3. When it starts to sizzle add the lemon juice.
  4. Fry a little longer and then add the honey, soya sauce and salt.
  5. Fry the mix until the onions are golden brown.
    Adding the Sweet Corn:
  1. Add the frozen sweet corn and fry all together until the sweet corn has defrosted.
    Getting ready to eat:
  1. Take the seeds out of the gem squash.
  2. Place the onion and sweet corn mixture in the gem squash.
  3. Enjoy with a spoon.
