Oh So Easy Couscous Salad

What can you add?

I usually add pineapple in this Oh So Easy Couscous Salad but unfortunately I ran out of pineapple. My husband is getting a bit tired of cutting so many pineapples for me.    So this salad is especially for those who can’t eat pineapple or who just don’t like it. But for those who like pineapple…feel free to add some pineapple pieces.

Other than that you can also add raw green beans, red cabbage and even raw broccoli pieces. The goal here is really to eat something raw. If you don’t like spring onions you can add purple onion pieces instead. Or if you are crazy about onions…why not add both? You can also add some salad leaves if you’d like. But if you choose to do that I would suggest you serve the salad immediately. The salad leaves can get slimy if they are left over-night in the salad. However, since I make our lunches the previous day I can’t serve it immediately. So I make the salad the previous day and just add the leaves the next day. That way the salad leaves stays fresh and crunchy.

About the quantities

I suppose the right way to measure the peppers and cucumber would be to say a cup of finely sliced green pepperhalf a cup of finely sliced cucumber and so on. However, I find it a bit tiresome to follow recipes where I have to cut something and then still have to measure it as well. So that is why I’m measuring in quarters here…I think it might be faster. Also, the quantities are really up to you. You can’t make a mistake. If you want to add 2 tomatoes, half of a cucumber, a whole pineapple then go ahead. So yes, don’t let the quarters intimidate you…

Oh So Easy Couscous Salad

Ingredients

  • ¾ cup Whole Wheat Couscous
  • ¾ cup Boiling Water
  • 1 Tomato
  • 1 Spring Onion
  • ¼ Yellow Pepper
  • ¼ Green Pepper
  • ¼ Red Pepper
  • ¼ Cucumber
  • 1 tablespoon Lemon Juice
  • 1 teaspoon Herbal Salt

Instructions

    The Beginning Part:
  1. Add the couscous to a bowl that has a lid and can stand high temperatures.
  2. Add the boiling water to the couscous.
  3. Place the lid over the bowl and let the couscous stand for 15 minutes.
    The Cutting Part:
  1. Cut the tomato and spring onion into small pieces and add to a salad bowl.
  2. Cut the yellow, green and red peppers into small pieces and add to the salad bowl.
  3. Cut the cucumber into small pieces and add to the salad bowl.
    The Almost There Part:
  1. Add the lemon juice and herbal salt.
  2. Mix all thoroughly.

Notes

* You can add pineapple as well since it goes delicious with this recipe.
