Delicious Vegan Tossed Salad

A delicious vegan tossed salad recipe that only uses raw ingredients. Lemon juice and herbal salt are added for an extra delicious taste. The goal with this recipe is to eat something raw to aid in digestion. Furthermore, you don’t have to use the exact ingredients in this salad. You can, for example, eliminate the carrots and replace it with some raw green beans. Or you can use all the ingredients and add some raw red cabbage, raw green beans, avocado etc. Whatever you like best.

I didn’t use exact quantities for this recipe because the quantities are really up to you. Somebody might prefer a lot of lemon juice with their salad while others might prefer just a drop. My husband, for example, likes a lot of salt but I can get along without even adding a little bit of salt in the salad. In South-Africa you can buy herbal salt at Dis-Chem stores. Some other stores like Pick ‘n Pay, Clicks, Wellness Warehouse, Woolworths etc. might carry it too. Or you can make your own herbal salt by mixing the following ingredients together:

  • Himalayan Salt
  • Thyme and Oreganum,
  • Sage and Paprika,
  • Sweet Basil and Mixed Herbs.

You can even experiment and add other herbs or spices or eliminate some of those mentioned above. Don’t want to do any of that? No problem. Then try Herbamare from Amazon. A.Vogel always has such awesome products.

As for the leaves…I don’t know about international but in South-Africa you can buy a pre-packed mix of assorted lettuce leaves. There are different packages with different kinds of leaves in them. I like the packets that contain some purple leaves since the purple leaves give the salad such a nice color. The salad just looks extra appetizing with some purple in it.

Delicious Vegan Tossed Salad

Ingredients

  • 1 Carrot
  • 1 Tomato
  • 1 Spring Onion
  • ½ Yellow Pepper
  • ½ Green Pepper
  • ½ Red Pepper
  • ¼ Cucumber
  • Handful Assorted Leaves
  • Lemon Juice to sprinkle
  • Herbal Salt to sprinkle

Instructions

    Add the following to a salad bowl:
  1. Peel the carrot and cut in small little rings.
  2. Cut the tomato and spring onion in small pieces.
  3. Cut the yellow, green and red pepper in small pieces.
  4. Cut the cucumber in small pieces.
  5. Add a handful1 of assorted leaves to the mix.
  6. Mix all together in the salad bowl.
  7. Add the lemon juice and herbal salt to the mix.
  8. Serve immediately for best results.

Notes

1. Or approximately 40 g of assorted leaves.
