Delicious Vegan Haystacks

This is a delicious vegan haystacks recipe that goes well with your favorite flavor crunchy chips. We found that the chutney flavor and/or cheddar cheese Simba chips works best for this recipe. But that can also just be our personal preferences. I know a few people who prefer nachos chips with this recipe. Well, you do what works best for you.

For this specific recipe we had some left-over beans which we just added to the tomato and onion sauce. It really gave some extra delicious flavor. So if you want you can add some beans to your sauce as well. Another ingredient you can add to your sauce is carrot strips. To get carrot strips you first peel your carrot to get rid of any unwanted parts on the outside.  Once the outer layer of the carrot is peeled you keep on peeling the carrot. Those peeled strips you can then add to your tomato and onion sauce.

Ingredients

    The Rice & Chips Part:
  • ½ cup of Whole Wheat Rice
  • Simba Chips or Nachos
    The Salad Part:
  • 1 Carrot
  • 1 Spring Onion
  • ¼ Cucumber
  • Robot Peppers (Optional)
  • Assorted Salad Leaves (Optional)
    The Sauce Part:
  • 4 medium-sized Tomatoes
  • 1 ½ Onions
  • 2 tablespoons Olive Oil
  • 1 ½ tablespoons Fructose/Honey (Optional)
  • 1 ½ tablespoons Lemon Juice
  • 1 ½ teaspoon Healthy Soya Sauce (Optional)
  • 1 teaspoon Himalayan Salt
  • ½ teaspoon Mixed Herbs
  • ½ teaspoon Oreganum
  • ½ teaspoon Paprika
  • 1 ½ cups of Water
  • One 70g tin of Tomato Paste1

Instructions

    The Rice Part:
  1. Cook the rice until soft. Remember to add a little bit of salt.
  2. Drain any excess water from the rice.
    The Salad Part:
    Add the following to a bowl:
  1. Peel the carrot and cut in small little rings.
  2. Cut the spring onion, cucumber and peppers in small pieces.
  3. Add a handful of assorted leaves to the mix.
  4. Mix all well together.
    The Sauce Part:
  1. Cut the tomatoes and onions in small pieces.
  2. Place only the onions in a frying pan and add the olive oil.
  3. Fry the onions on high until it begins to sizzle.
  4. Add all of the following ingredients: fructose, lemon juice, soya sauce, salt, mixed herbs, oreganum and paprika.
  5. Fry the mixture until it is golden brown.
  6. Add the tomato pieces, water and tomato paste.
  7. Mix thoroughly and let it cook on high for another 30 minutes. Stir occasionally.
    The Getting Ready Part:
  1. Once you have all your ingredients ready you do the following:
  2. You spread your chips on a plate.
  3. You dish up some of the salad over the chips.
  4. You dish up some of the sauce over the salad.
  5. You can use a mortar and pestle to crunch some of the chips. These fine chips you can then add on top of the sauce in the place of cheese. Or you can use cashews instead of the chips.
  6. And that’s it. You made your stack. Enjoy!

Notes

1. Buy tomato paste that only contains tomatoes and salt. Try to avoid the ones with preservatives.
