Delicious Oven Roasted Beetroot

Now here is a recipe that is guaranteed to get your hands dirty. What a messy messy business!

Note that you will have to do some preparation for this recipe the day before unless you want to wait for a very long time for the beets to cook soft. I’ve found that the beets just take way too long to cook nice and soft so I leave them in a hotbox (wonderbag) overnight. Then they are very soft and immediately ready to use the next day.

A last note…You can also sprinkle a little bit of honey/fructose over the beets to give them a more sweet taste. Or more lemon juice to make it sweet and sour. Or just salt to make it tasty salty beets. Whatever you fancy.

Delicious Oven Roasted Beetroot


  • 10 Medium Beets
  • Cooking Spray
  • Aluminium Foil
  • Olive Oil
    To Sprinkle:
  • Lemon Juice
  • Paprika
  • Garlic
  • Herbal Salt
  • Himalayan Salt


  1. Rinse all the beets.
  2. Place in a pot with warm kettle water. Add a little salt.
  3. Cook on the stove until the water starts boiling.
  4. Place the pot in a hotbox and let it stand overnight.
  5. Drain all the water from the pot. Remove the skins from the beets and remove any unwanted parts.
  6. Place aluminium foil in an oven pan and spray it with cooking spray.
  7. Use a pastry brush to cover the foil with a thin layer of oil.
  8. Cut the beets in thin slices and place the slices next to each over in the oven pan.1
  9. Sprinkle a little bit of olive oil, lemon juice, paprika, garlic, herbal salt and Himalayan salt over the beets.
  10. Place the beets in the oven at 270°C (518°F)2 for 20 minutes then turn the pan around and leave it in the oven for another 20 minutes.
  11. They are best when served immediately.


1. It doesn’t matter if the slices touch each other. They can even be placed on top of each other. But note that the slices at the bottom might start burning before the slices at the top are done.

2. The oven times and heat temperature may vary since we use a gas stove.
