Delicious Carrot and Potato Mash

This is an easy but yet still tasty vegan carrot and potato mash recipe. It uses a bit of coconut milk in order to obtain a delicious creamy consistency. However, if you do not wish to use coconut milk you can always use almond milk, soya milk or potato milk (Swiss Dream) to obtain the creamy consistency. You can also use other spices you might prefer more and this recipe will still turn out to be delicious. 

Delicious Carrot and Potato Mash

Cook Time: 40 minutes

Total Time: 50 minutes

Delicious Carrot and Potato Mash


  • 5 small Potatoes or 2 large ones
  • 2 medium-size Carrots
  • ½ cup Coconut Milk1
  • ½ teaspoon Oreganum
  • ½ teaspoon Mixed Herbs
  • ½ teaspoon Paprika
  • ¼ teaspoon Himalayan Salt


    Cooking the potatoes and carrots:
  1. Cut potatoes and carrots in half and place in a pot.2 Add enough boiling kettle water to the pot to cover the potatoes and carrots. Add a ½ teaspoon of himalayan salt as well.
  2. Cook the potatoes and carrots till it is very soft. It should take approximately 40 minutes on high heat.
    The mashing part:
  1. Mash the potatoes and carrots together.
  2. Add the coconut milk.
  3. Add the oreganum, mixed herbs, paprika and Himalayan salt.
  4. Mix thoroughly and serve.


1. Instead of coconut milk you can use soya milk or any other milk alternative. However, I found coconut milk gives it a semi-sweet delicious taste.

2. Cutting the potatoes and carrots in half and adding boiling kettle water to the pot will reduce the cooking time.
