Date and Apple Salad

About the Leaves:

I found that it’s a bit hard to measure leaves. My suggestion would be to add as much leaves as you want. Or as little as you want. I don’t know about international but in South-Africa we can buy a pre-packed mix of assorted lettuce leaves, wild rocket leaves and spinach baby leaves. The packet’s name is Wild Rocket & Spinach Baby Leafs Salad. It comes in 120 g packets.

About the Apples:

We use Granny Smith apples. However, I know some people say that the Granny Smith apples are too sour for them. So if you don’t like Granny Smith apples you can buy one of the sweeter apple brands.

Date and Apple Salad


  • 30 g mix of Assorted Lettuce Leaves, Wild Rocket Leaves, Spinach Baby Leaves
  • 2 small Apples
  • 1 cup Dates1 (whole)
  • ⅛ cup Spring Onion Pieces (Optional)
  • ½ cup Raisins
  • 1 tablespoon Lemon Juice
  • ¼ teaspoon Himalayan Salt
  • Juice from one Orange2


  1. Add the leave mix to a salad bowl.
  2. Cut the apples and dates into small pieces.
  3. Cut the spring onion into pieces that will fill a ⅛ cup.
  4. Add the apple, date and spring onion pieces to the salad bowl.
  5. Add the raisins, lemon juice, salt and orange juice to the salad bowl.
  6. Mix all together thoroughly.
  7. For best results serve immediately.


1. Remove any pits you may find in the dates.

2. Use freshly squeezed orange juice. If you’d rather buy orange juice make sure it doesn’t contain sugar or preservatives.
