Coconut Cream Potato Bake

Before we became vegans I regularly made potato bake for us. I used the sauce from one of the potato bake packets one can buy at the grocery store. It gave the potatoes such a nice taste. Unfortunately it contained milk, preservatives and all kinds of things that are not really healthy. So I quickly had to find a replacement for the potato bake recipe I used to make. After a lot of experimentation and a few failures I eventually came up with a vegan potato bake recipe. Okay, it’s not quite the same as before but it’s still a lovely replacement.

Coconut Cream Potato Bake

Coconut Cream Potato Bake


  • 5 small Potatoes or 2 large ones
  • 1 cup Coconut Cream
  • 1 tablespoon Honey (or Fructose)
  • ½ tablespoon Onion Powder (optional)
  • 1 teaspoon Sweet Basil (dried)
  • 1 teaspoon Green Onion Spice
  • ½ teaspoon Corn Starch
  • ¼ teaspoon Himalayan salt
  • Spring Onion (or Chives)
  • Cooking Spray
  • Paprika to sprinkle


    Cooking the Potatoes:
  1. Cut the potatoes in half and place in a pot.1 Add enough boiling kettle water to the pot to cover the potatoes. Add a ½ teaspoon of himalayan salt as well.
  2. Cook the potatoes till it is medium done. It must not be too soft. It should take approximately 30 minutes on high heat.
    Making the Sauce:
  1. Place the following sauce ingredients in a separate pot and warm the ingredients for 3 to 5 minutes: coconut cream, honey, onion powder, sweet basil, green onion spice, corn starch, himalayan salt, spring onion.
  2. Mix constantly until the corn starch and honey have dissolved and then remove the pot from the stove. Be careful not to cook it for too long.
    Baking the Mix:
  1. Spray a baking dish with cooking spray.
  2. When the potatoes are ready, cut them into thin slices.
  3. Add the potatoes and sauce together in the baking dish.
  4. Sprinkle paprika on top.
  5. Bake in the oven at 240°C/464°F for 30 minutes.2


1. Cutting the potatoes in half and adding boiling kettle water to the pot will reduce the cooking time.

2. The oven times and heat temperature may vary since we use a gas stove.
